Er passt zum Grillabend oder auch pur als Snack zwischendurch und l\u00e4sst sich sogar hervorragend in der Lunchbox mit zur Arbeit oder auf die Fahrradtour nehmen. Und nat\u00fcrlich kann man auch die Mama zum Muttertag mit einem Herz aus Granatapfelkernen erfreuen! So geht\u00b4s:<\/p>\n\n\n\n<p><strong>1kg Spargel<\/strong> in bunter Mischung (wei\u00dfer, gr\u00fcner oder violetter) sch\u00e4len, l\u00e4ngshalbieren und in mundgerechte St\u00fccke schneiden und in kochendem Wasser mit <strong>Zucker und Salz <\/strong>ca. 5min garen, herausfischen und abtropfen lassen.<\/p>\n\n\n\n<p>In ca. <strong>600ml Spargelwasser<\/strong> geben Sie nun 250g Couscous und lassen es einmal aufkochen und 5min quellen, w\u00e4hrenddessen k\u00f6nnen Sie schon mal den <strong>Granatapfel<\/strong> vierteln und die Kerne \u201eherausklopfen\u201c (pulen trifft es vielleicht eher\u2026) jetzt <strong>\u00bd Bund Pfefferminze<\/strong> und <strong>\u00bd Bund glatte Petersilie<\/strong> waschen, trockensch\u00fctteln und fein hacken, beides zur H\u00e4lfte unter den Couscous heben. Den Saft von <strong>2 Limetten<\/strong> mit <strong>6 EL Oliven\u00f6l<\/strong> verr\u00fchren und recht kr\u00e4ftig mit <strong>Salz und Pfeffer<\/strong> abschmecken, davon die H\u00e4lfte zum Couscous und die andere H\u00e4lfte \u00fcber den Spargel geben.<\/p>\n\n\n\n<p><strong>250g Naturjoghurt<\/strong> mit dem Rest der Kr\u00e4uter vermischen und nun alles zusammen anrichten: Couscous in eine Salatsch\u00fcssel f\u00fcllen, in die Mitte mit dem L\u00f6ffel eine Mulde f\u00fcr die Granatapfelkerne dr\u00fccken, die d\u00fcrfen Sie, wie gesagt, zum Muttertag und dar\u00fcber hinaus auch gern herzf\u00f6rmig gestalten! Drum herum die Joghurtso\u00dfe und ganz au\u00dfen auf den Couscous die Spargelst\u00fcckchen \u2013 schicki-micki, oder?<\/p>\n\n\n\n<p>Jetzt darf das Ganze gern noch eine \u00bd Std. an einem k\u00fchlen Ort ziehen, bevor Sie den Spargelkuss(kuss) genie\u00dfen.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Spargelsalat mit Couscous f\u00fcr 5-6 Dieser Salat bringt die Sommerfrische auf den Tisch.
